From very early times the Po Valley has
been the home of Italian pig breeders.
Countless Romanesque findings have confirmed the presence
of early intensive pig breeding in the area. Over the
centuries the importance of pork increased to become a
primary ingredient in the local traditional cuisine. Thanks
to their experience in pork processing, Modena together
with Parma and Bologna have become the international points
of reference for pork products. Castelnuovo Rangone, home
of dressed pork producers with centuries of tradition,
and world capital of pork processing and production technologies,
was also awarded the Order of Dressed Pork Masters of
Modena who are considered to be the best in the world.
Each year Castelnuovo Rangone celebrates this ancient
tradition by making a “Giant Pig Trotter”
which has earned a place in the Guinness Book of Records
and that the townspeople of Castelnuovo Rangone enjoy
the Sunday before Christmas.
